Sardine Salad
 

 

 

 

 

Sardine Salad-Carefully remove sardines from a large box; remove the heads, tails and skin; do this without breaking the sardines. Have ready a place nicely arranged with crisp lettuce leaves; arrange the sardines on this  and cover with thick mayonnaise. To the ordinary mayonnaise one half of a teaspoon of onion juice and a tablespoon of tarragon vinegar may be added. And if you like the sardines a little tart sprinkle them with vinegar before covering them with mayonnaise. (Jan. 13, 1910 Colorado Spring Gazette, Colorado Springs, Colorado)
