Creamed Cabbage


Creamed Cabbage-When buying cabbage select a small heavy head. Remove the coarser outside leaves out into quarters and soak for one hour in cold salted water. Drain and shake. Cut off the tough stock and chop the remainder of the cabbage quite fine. Put in saucepan cover with boiling salted water and boil for ten minutes. Drain add to a cream sauce and serve at once.
