Hot Milk Sponge Cake
4 egg yolks
1 1/2 cups sugar
1/2 cup boiling milk or water
1 1/2 cups cake flour
1/4 teaspoon salt
1 teaspoon baking powder
1 teaspoon lemon extract
4 stiffly beaten egg white
Beat egg yolks until very thick; add
sugar gradually and continue beating. Add milk; mix well and add
sifted dry ingredients. Mix until smooth and add extract. Fold in
egg whites. Bake in an ungreased cake pan in a slow 325 degree oven
for one hour. Invert pan to cool, then frost.
