Aunt Ruth's Salad

1 box jello (any flavor)
1 large can crushed pineapple
1 container small curd cottage cheese (16 ounces)
1 container cool-whip

In saucepan bring pineapple to boil and add jello.

Stir until jello is dissolved.

Cool to touch.

Add cottage cheese and cool-whip.

Mix thoroughly.

Store in refrigerator until serving.

(Transcriber Note: Ruth was one of the best cooks around. You knew when you went to her house for a meal you would leave with both a satisfied palate and a full stomach. Many of her recipes, while not actually her creations, became known by her name as she never failed to have them on hand to the delight of her family and friends.)

Ruth was born in Colfax on 7 Dec 1914 to Charles LeRoy "Roy" and Jennie Catherine Harms Moncelle. As the oldest of seven children she helped not only in the home but on the farm as well. She married Glenn Edward Morris (son of John Edward and Anna Cosby Morris) on 12 Mar 1947 at the Methodist Parsonage in Lexington (Rev. Walter H. Teesdale officiated; Virgil and Viola Brooks as witnesses). They settled on a farm near Pleasant Hill and Ruth lived there until moving into Lexington in the 1990's. She passed away 1 Oct 2000 and is buried at East Lawn Memorial Gardens in Bloomington, Illinois.
