Pineapple Raisin Drops

1/2 cup shortening
1 cup brown sugar
1/2 teaspoon vanilla extract
1 egg, well beaten
1/2 cup seedless raisins
1/2 cup nutmeats, broken
1/2 cup crushed pineapple, well drained
2 cups sifted flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt

Cream shortening and sugar together until light and fluffy.

Add vanilla, beaten egg, raisins, nuts and pineapple.

Sift flour, baking powder, soda and salt and stir into creamed mixture.

Drop from spoon on greased cookie sheet 1-1/2 inches apart.

Bake in a moderate oven (375 degrees) for 10 to 15 minutes.

Store in glass jar or tin box.

Makes 35 to 40 cookies.

Mildred Hefner was born on 24 Oct 1901 in Lexington, McLean County, Illinois. She married Clyde P Hefner (son of Nimrod Parker and Annetta "Nettie" Elbert Hefner). They settled on a farm near Lexington and had four known children (as of the 1930 census).
