Grandma’s Fruit Cobbler
A favorite of the 7 children and 21 grandchildren of Berneice Dugan Owen 1897-1970, Mother of Mary Lou Owen Boddy.
Crust
1 cup sugar
1 cup shortening
4 tsp. Baking powder
¼ tsp. salt
1 ¼ cup milk or may substitute water
2 cups flour
Mix like muffin batter. Line ungreased baking dish bottom with batter.
Fruit filling
2 cups fruit
3/4 cup sugar
1 TBLS butter
Heat fruit and sugar in saucepan and pour over batter. I also add a teaspoon of lemon juice in the tarter fruit. You may add cinnamon in peach and apricot cobbler.
Bake until brown and done in center.
(Note: This is a recipe Berneice shared with her grandchildren when they married. I use a 9” x 12” pyrex dish. Bake for 30min in 350° oven. Crust will rise to the top while cooking.)
