SOURDOUGH HOT CAKES
1 OR 2 EGGS
1 TSP. SALT
1 TSP. SODA
1 TBL. SUGAR
2 TBL. FAT
THE NIGHT BEFORE, PLACE STARTER IN A MEDIUM BOWL, ADD 2 CUPS WARM WATER AND 2 C. FLOUR. BEAT WELL AND SET IN WARM WATER PLACE TO DEVELOP OVERNIGHT. NEXT MORNING REMOVE 1-1/2 CUPS OF STARTER AND PLACE IN REFRIGERATER FOR NEXT BATCH. BE SURE TO ADD 3 TBL. SUGAR ON TOP OF STARTER. DO NOT STIR. TO REMAINING SPONGE ADD EGGS, SODA, SALT, AND SUGAR.
MIX WELL AND ADD FAT. BAKE ON HOT GRIDDLE, TURNING ONCE.
